Ingredients
- 1 pound onions
- 3 tablespoons olive oil
- 2 tablespoons butter
- 2 teaspoons salt
- ½ teaspoon sugar
- 8 cups vegetable stock
- 3 tablespoons flour
Method:
- Slice the onions
- Melt butter and oil in a pan – add onions
- Cover and cook for 15 minutes
- Add salt, pepper and sugar
- Allow onions to caramelise
- Add flour and stir
- Add the stock and simmer (30 minutes at least)
- Put soup in bowl
- Top with bread and grated cheese
- Grill and Serve
