Hawthornberry Ketchup


  • 500g Hawthorn Berries, removed from stalks and washed
  • 350ml water
  • 350ml cider vinegar
  • 170g sugar


  1. Place the berries in a large pan
  2. Add water and cider vinegar
  3. Bring to boil and simmer until the skins of the berries all split
  4. Sieve to extract the juice, discard the pulp
  5. Put the juice into a pan and add sugar
  6. Bring to the boil then simmer
  7. Reduce (by about half) until you have a rich red syrup
  8. Place ketchup in sterilised jars
