Hungarian Vegetable Stew

Ingredients

  • 1 large onion, finely chopped
  • red pepper, diced
  • 3 medium potatoes, diced
  • 2 carrots, diced
  • ½ swede diced
  • 2 cloves garlic
  • 2tsp paprika
  • 350ml stock
  • 50gm sun-dried tomatoes
  • 1 tbsp honey
  • Chili pepper chopped (optional)
  • 100ml sour cream (optional)
  • Dried/fresh parsley

Slow Cooker Method

  1. When dicing the vegetables, cut them to the same size
  2. Place all the ingredients in the slow cooker
  3. Cover and cook on low for 8 hours
  4. Before serving, stir in parsley and sour cream
