Ingredients
- 1 large onion, finely chopped
- red pepper, diced
- 3 medium potatoes, diced
- 2 carrots, diced
- ½ swede diced
- 2 cloves garlic
- 2tsp paprika
- 350ml stock
- 50gm sun-dried tomatoes
- 1 tbsp honey
- Chili pepper chopped (optional)
- 100ml sour cream (optional)
- Dried/fresh parsley
Slow Cooker Method
- When dicing the vegetables, cut them to the same size
- Place all the ingredients in the slow cooker
- Cover and cook on low for 8 hours
- Before serving, stir in parsley and sour cream
