Pea and Pesto Soup

Ingredients:

  • 500g frozen peas
  • 4 potatoes, peeled and cut into cubes
  • 1l vegetable stock
  • 4tbsp green pesto
  • creme fraiche, to serve (optional)

Method:

  1. Put the peas and potatoes into a large pot
  2. Pour over the stock and bring to the boil
  3. Simmer for 10 minutes, until the potatoes soften
  4. Blend to desired consistency
  5. Mix in the pesto
  6. Serve with some crème fraiche
