
Our Aim
To build skills and confidence in using home grown or locally sourced fresh fruit and vegetables to cook basic meals from scratch.
Basic Cooking Skills Course
Participants will be given the opportunity to:
- complete a cooking course that uses home grown or locally sourced fresh fruit and vegetables
- explore a variety of cooking methods
- obtain certificates in Basic Cooking Skills and Elementary Food Hygiene
The Basic Cooking Skills course runs over six sessions, using different mediums; including steaming, stir-fry, braising and microwave cooking. At the end of the course participants will be able to produce economical and tasty meals.
The course uses seasonal fruit and vegetables, focussing on ingredients that can be grown in the Scottish Borders. We use different protein sources; non-meat, fish, meat and pulses, locally sourced wherever possible.
We also help participants to understand the value of having “larder items”, which can add taste and value to seasonal ingredients. We also look at how fresh herbs, especially those that will grow readily in The Borders, can add taste to basic ingredients at very little cost.
Participants share meals cooked during each session and take home their own healthy meal.
All ingredients and equipment are supplied.
