Ingredients
- 500g Hawthorn Berries, removed from stalks and washed
- 350ml water
- 350ml cider vinegar
- 170g sugar
Method
- Place the berries in a large pan
- Add water and cider vinegar
- Bring to boil and simmer until the skins of the berries all split
- Sieve to extract the juice, discard the pulp
- Put the juice into a pan and add sugar
- Bring to the boil then simmer
- Reduce (by about half) until you have a rich red syrup
- Place ketchup in sterilised jars
