Courgette Quiche


  • olive oil
  • 2-3 courgettes, halved then sliced
  • handful of spring onions or one large onion, chopped
  • 8 cherry tomatoes, halved
  • 1 pint milk
  • 3 eggs
  • butter
  • shortcrust pastry


  1. Preheat oven to gas mark 6
  2. Grease a tart dish with butter, then lay out ready-made shortcrust pastry
  3. Heat the oil in pan and add chopped courgette and onion.
  4. Fry for 5-10 minutes, until soft and golden
  5. Add the cooked vegetables to pastry case
  6. Beat the eggs and milk together in a jug and add to pastry case
  7. Add the halved tomatoes
  8. Cook in the oven for 30 mins, until the pastry and top of the quiche are golden
